Lagavulin: foundation: 1816/1837 pronunciation: “Laga-wullen” meaning: “sink at the mill* status: in operation

The Lagavulin Distillery is located on the southeast coast of Islay and produces one of the smokiest whiskies ever. It was not named Lagavulin until 1937, when the two distilleries were merged into one. The Lagavulin Stills have very wide necks and look rather clumsy, but this form lets the flavours of the Low wines come up with the alcohol vapour. But it also means that distillation is very slow and gentle to avoid taking too many unloved elements such as fusel oils with you.
The whisky is smoky in style, peaty, salty and yet sweet (sherry), seaweed and long.
